December 3 was brewing night once again. This time our mission was to brew two batches for the GFI New Year’s party in January. Both batches were made on this dark December afternoon/night, and came right off the shelf at Vestbrygg: One 7 fjell Tippetue Petit Saison, and one Vestbrygg Mild Jul. We managed this by using an additional brewing pot, and in total we did not use much more time than usual, as much of the process can be done in parallell.
Despite the busy schedule, we got to implement a new brewing technique, which should be the standard at Gale from now on. We’ve been using the rotating tank lab a few times now, but this was the first time we actually utilized the rotating table itself. This certainly adds to the complexity of the beer, allowing the Coriolis spirit to take its place in the beer.
The beer was bottled on December 22, and we ended up with about 23L of each beer, great success!
